Prepare the Squid
Bring a pot of water to a rolling boil.
Add the sliced squid and boil it for just 2 minutes. Cook it fast to prevent it from becoming chewy.
Drain the squid immediately and set aside.

Prepare the Sauce
In a small bowl, whisk together all the sauce ingredients: oyster sauce, low-sodium soy sauce, dark soy sauce, sugar, sesame oil, water, and cornstarch.
Mix well until the cornstarch is completely dissolved. Set aside.

Stir-Fry
Heat 2 tablespoons of oil in a wok or large pan over high heat.
Add the minced garlic and fry until fragrant.
Add the sliced bell peppers and onions to the pan. Stir-fry for a few minutes until they begin to soften but are still crisp.
Add the sliced ginger and continue to stir-fry briefly.
Add the pre-cooked squid to the pan.
Pour the sauce gradually over the ingredients while stirring constantly to thicken.
Stir-fry until the sauce coats everything and is glossy.
Finally, add your desired amount of chili (if using) and give it one last quick stir.
