Prep the Aromatics and Eggs
Heat 2 tablespoons of oil in a large pan or wok over medium-high heat. Add 2 tablespoons of minced garlic and sauté briefly until fragrant (do not let it burn).

Scramble the Eggs
Crack 2 eggs directly into the pan. Quickly stir it up to scramble the eggs and cook them until they are mostly set but still slightly moist.

Add the rice and season
Add 2 big bowls of leftover steamed rice and stir-fry, breaking up any clumps, until the rice is heated through and coated with the egg and oil. Â Add 2 tablespoons of oyster sauce, 3 tablespoons of soy sauce, and 1 tablespoon of fish sauce. Continue to stir-fry and toss until the rice is yellow and evenly seasoned. Stir in the chopped spring onion. For a crispy texture, press the rice down and let it rest on low heat for a few minutes. Drizzle with a dash of sesame oil before serving.
