The lime adds a subtle brightness that cuts through the sweetness. Gradually pour in 200ml fresh milk and 2 tbsp condensed milk, mixing carefully until the batter is smooth. If it's too thick, add a little more milk, a tablespoon at a time, until it has the consistency of heavy cream.

Make the crepe
While your crêpes are cooking, you can prepare the banana filling. First, slice half of a banana into thin, round pieces. Add the banana slices onto the crepe. Cook for 1-2 minutes until they start to soften and turn a light golden brown. The heat will caramelize the banana's natural sugars, which brings out a richer, sweeter flavor. When they are fully cooked on one side, flip them to brown the other side. You'll notice the wonderful aroma of the banana as it cooks.
