When we first opened our restaurant, we were all about Vietnamese and Chinese food. That's what we knew, that's what we grew up with, and that's what we served. But after a while, we started to feel a little stuck. We wanted to offer our customers something different, something that would surprise and delight them. Shrimp was the perfect starting point. It's a fantastic ingredient—super healthy, low in fat, and full of calcium. We knew we could do something special with it. We spent a lot of time in the kitchen, experimenting with different techniques, and finally landed on a pan-seared shrimp dish with bacon.
